Chia Seed Mini Crepes with Maple Syrup

I made these delicious mini crepes one morning for morning tea. I was craving something different, but not a full meal. Something that was good for my digestive system too! Chia seeds were the first ingredient I pulled out of my whole foods pantry. I always make chia pudding and generally they are best with a soak overnight. Anyway, I went with the flow and out came these crepes! They are super simple and only required three-four ingredients!

Ingredients:

• 1 cup all-purpose flour ( I used organic self-raising flour)

• 1 tablespoon chia seeds

• 1 ¼ cups milk (or any plant-based milk)

• 1 tablespoon melted butter (or coconut oil) for cooking

• Maple syrup, for drizzling

Instructions:

1. Prepare the Batter: In a mixing bowl, whisk together the flour, chia seeds and milk.

2. Absorb: Let it rest for about 5-10 minutes to allow the chia seeds to absorb some moisture.

3. Cook the Crepes: Heat a non-stick pan or crepe pan over medium heat and lightly grease it with a small amount of butter or oil. Pour about 2 tablespoons of batter into the pan, swirling it around to create a thin, mini crepe. Cook for about 1-2 minutes until the edges lift, then flip and cook for another minute on the other side.

4. Repeat: Continue with the rest of the batter, stacking the mini crepes on a plate as you go.

5. Serve: Drizzle with maple syrup and top with fresh berries or fruit, if desired.

Enjoy these light and delicious chia seed mini crepes as a snack or a quick treat!
