Peanut Butter Cups

There is nothing more tantalising then enjoying your favourite spreads in some simple, wholesome treats that don’t really take too many ingredients at all! In fact, most of these can be found in your staple pantry items! Enjoy!

Ingredients:

For the Chocolate Layer:

• 1 cup raw cacao powder

• 1/2 cup coconut oil (melted)

• 1/4 cup maple syrup or raw honey

• 1/2 teaspoon vanilla extract

• Pinch of sea salt

For the Peanut Butter Filling:

• 1/2 cup natural peanut butter (no added sugar or salt)

• 2 tablespoons coconut oil (melted)

• 2 tablespoons maple syrup or raw honey

• 1/2 teaspoon vanilla extract

• Pinch of sea salt

Instructions:

1. Prepare the Chocolate Layer:

• In a medium bowl, mix together the raw cacao powder, melted coconut oil, maple syrup (or honey), vanilla extract, and a pinch of sea salt until smooth and well combined.

2. Prepare the Peanut Butter Filling:

• In a separate bowl, mix together the natural peanut butter, melted coconut oil, maple syrup (or honey), vanilla extract, and a pinch of sea salt until smooth and creamy.

3. Assemble the Peanut Butter Cups:

• Line a mini muffin tin with paper liners.

• Spoon about 1 teaspoon of the chocolate mixture into the bottom of each liner. Use the back of the spoon to spread it evenly.

• Place the muffin tin in the freezer for about 10 minutes, or until the chocolate layer is firm.

• Once the chocolate layer is firm, add about 1 teaspoon of the peanut butter filling on top of each chocolate layer. Spread it evenly with the back of a spoon.

• Freeze again for about 10 minutes, or until the peanut butter layer is firm.

• Finally, spoon another teaspoon of the chocolate mixture on top of the peanut butter layer, spreading it evenly to cover the peanut butter completely.

• Freeze the peanut butter cups for at least 20 minutes, or until completely firm.

4. Serve and Store:

• Once the peanut butter cups are firm, you can remove them from the muffin tin and paper liners.

• Store the peanut butter cups in an airtight container in the refrigerator for up to two weeks or in the freezer for up to three months.
