INGREDIENTS

125g Flour (Choose: Chickpea Flour , Buckwheat Flour, Almond Flour, Quinoa Flour)

1 teaspoon garlic powder or freshly crushed

1 teaspoon baking powder

1/2 teaspoon himalayan salt

1 brown onion diced

1/2 cup flat leaf parsley, finely chopped

1/2 cup coconut yoghurt

CHOOSE (2):

1 1/2 cups grated zucchini / capsicum

2 cups corn kernels / carrot

1 tsp Goats Cheese (so good!) per serving

Combine all ingredients. Seperate into 12 fritters and place on frying pan with some olive oil. Flatten with spatula. Cook through. Serve warm or chilled on bed of greens or with salsa (below) or 1 tsp goats cheese per serving.

Can be frozen

MAKES 12 Fritters

Serves 3

SALSA

1 1/2cup fresh spinach leaves

2 cups diced tomatoes

1 purple onion chopped

1/2 cup chopped parsley

1 lemon juiced

Combine and toss. Serve into portions.
