Sweet Potato Nachos

1kg sweet potato cut in thin wedges

Juice of lime

1 tsp smoked paprika

1/2 tsp salt

Topping

1 corn

250g canned black beans, drained and rinsed

1 cup tomato diced

1/2 cup parsley chopped

1 purple onion diced

1 cup tahini sauce

1 lime

Line baking dish and cook seasoned sweet potato for 30 mins on 200. Lightly sear the corn kernels. Layer sweet potato chips with all the remaining ingredients. Sprinkle with tahini sauce and serve with lime wedges!
