For the Bowl:

  • 2 medium beetroots, roasted & sliced

  • 1 cup cooked quinoa or brown rice

  • 2 large handfuls of mixed greens (spinach, rocket, or kale)

  • ½ cup cherry tomatoes, halved

  • ¼ red onion, thinly sliced

  • ¼ cup walnuts, toasted

  • 80g goat’s cheese, crumbled

  • 1 tbsp pumpkin seeds

For the Dressing:

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp Dijon mustard

Instructions
